I have a friend who adores all things lemon, so I decided to make her some lemon curd for the holidays. I had never made lemon curd before, and thought it was difficult to make, but I found that wasn't true. I used this easy recipe from Martha Stewart, then processed it in boiling canning water for 25 minutes. It turned out so yummy! Since it's canned, I can mail it to my friend in Oregon without it spoiling. I will also send her some lavender tea from my garden to go with it.
