During one of the SYY talks last year, I learned about “bullet-proof coffee” and decided to give it a try. I was amazed by the long-lasting, jitter-free energy it gave me, and I have been drinking it ever since. It sounds very strange and hard-to-believe, but butter churned from the milk of grass-fed cows has been discovered to be a new super food, especially for the brain! A cup of bullet-proof coffee gives me hours of creative productivity and focus.
I make my version of bullet-proof coffee by starting with organic coffee beans which I grind myself. I put the brewed coffee into a blender with 2 TBSP of organic coconut oil and 2 TBSP of organic grass-fed butter, and a teaspoon of cinnamon. Blend it up, and viola! I love brain food that is fast, easy and can be made ahead-of-time in large batches. This recipe fits the bill quite nicely. Yes, these are the same seeds they use to make chia-pets and chia-heads!
Recently, these silly seeds have gone from cheesy to superfood! I came up with this pudding myself because I always seem to crave pumpkin pie at this time of year. This healthy alternative gives me hours of creative spark:
M's Pumpkin Chia Pudding:
1 can of pumpkin (15 oz.)
1 cup of almond milk
1 TBSP of pumpkin pie spice
¼ cup of chia seeds
Mix it all together and let sit in the fridge for 30 minutes. I put a little honey on top for extra sweetness, and it's also really yummy with a few salted cashews on top.
